This page is dedicated to my late sister, Luli Gray

Luli died August 16, 2017

Luli was a professional (and excellent) cook. Here is her recipe for no-knead whole wheat bread, with five ingredients. It has a soft crumb and chewy crust, and is way easy.

3 3/4 C whole wheat flour
1 envelope yeast (2 1/4 t)
1 T honey (or molasses)
2 C warm water (or substitute milk for a cup of the water)
1 t salt

Butter a 9×5 loaf pan or use parchment paper
Warm flour in mixing bowl in lowest temperature oven for five minutes or so.
Dissolve yeast in 1/2 C of the water.
When yeast gets foamy, add to flour with honey, salt, and rest of the liquid and stir it all up.
Turn into pan, cover, let rise at room temperature till almost doubled.
Bake in preheated 425 oven for ten minutes, then reduce to 350 and bake about 50 minutes more till well-browned and sounds hollow when you tap it. Let it cool completely before slicing.

DON’T FORGET to order Luli’s posthumous picture book, The Pear Tree, based on a Spanish folktale, out October 8,2019 from Penny Candy Books.
